Iberico Ham in Spanish, it is made from the meat Iberico pigs, a breed of small brown animals native to the Andalusia region of Spain, exclusively bread on acorns. Traditionally, this fine fat less, nutty tasting cured ham ( for 2 years or so) is only eaten raw in thin slices with bread.
