  • Creamed Cabbage Soup 1/4 lb. bacon 2 quarts cold water 1 carrot, peeled 1 onion, chopped 1 potato, peeled 1 small cabbage, shredded Pinch of thyme 1 cup cream Salt and pepper Grated cheese Put a solid piece of bacon in a pan with the cold water. Bring to a boil and cook, covered, for 30 minutes. Add carrot, onion and potatoes. Simmer, uncovered, for an hour. Add cabbage and thyme and continue cooking for 35 minutes. Discard carrot, take out the potato and press through a sieve back into the soup. Season with salt and pepper. Add cream and let simmer gently for 3 to 4 minutes.
