  • Golden Yam Brownies 1 c butter, softened 1 c brown sugar 1 c sugar 4 eggs 2 tsp. vanilla extract 1-1/2 c flour 1 tsp. baking powder 1/2 tsp. salt 2 c peeled and finely shredded yam 1 c powdered sugar 2 Tbsp. butter or margarine 2 Tbsp. milk Heat oven to 350. Grease a 9x13 baking pan. In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking powder and salt; stir into the batter just until blended. Fold in the shredded yam. Spread the batter evenly in the greased baking pan. Bake for 30 min, or until a toothpick inserted into the center comes out clean. Mix together the powdered sugar, butter and milk until smooth. Spread over the brownies while they are still warm. They will absorb some of the glaze. Serve warm or hot.
