Nicole Gray started her modeling career through Hawaiian Tropic and "then I just met a couple people, and they introduced me to girls who introduced me to agents." From there, her career began and she has appeared in FHM, Spanish Maxim, Hot Rod and Surfshot among others magazines. Nicole Gray was also a model on the NBC show Deal or no Deal. Some of the brands she has modeled for include: Reef Girl, Monster Energy Drink, Toyo Tires, Ellie Shoes and Dream Girl cover (which is Harley-Davidson's Official calendar). She also did a "Two and a Half Men" billboard and promo with Charlie Sheen. She was cast in director Pete Dobson's feature Exit 102 starring Chazz Palminteri and James Woods. Nicole described the film as a mix of West Side Story meets American Graffiti. The director contacted her after seeing her modeling pictures and that she would be perfect for the part. "I've never taken any acting classes and I kind of just laughed it off thinking that movie roles, especially good ones like this, were unattainable. He wrote me back and told me that he really wanted me to try out and got the role. It was very, very exciting." I don't take myself too seriously at all." Nicole Gray shared that she went through a wild stage in high school. "Once or twice a week I would go to Albertson's or Food4Less or Rite Aid and steal like three bottles of alcohol like every week. I stole hundreds and hundreds of dollars worth of alcohol."
