  • Spicy Chimichurri Sauce 5 cloves fresh garlic About 1 cup densely packed fresh parsley 1/2 cup good quality olive oil 1 1/2 T. fresh lemon juice 1/2 t. dried red pepper flakes 1/2 t. salt or more to taste 1/8 t. black pepper, or more to taste Peel garlic. Rinse parsley well and shake the leaves to remove any excess water. Remove and discard the tough lower stems but do not worry about the smaller upper stems. You should have about 1 cup of leaves. Drop parsley through the feed tube of a food processor with the machine running. Process until finely minced. Drop the garlic cloves one at a time through the feed tube of the processor with the machine running. Process until finely minced. Add the olive oil, lemon juice, red pepper flakes,salt and black pepper to the bowl of the processor and process until well mixed, about 5 to 6 seconds. Taste for seasoning, adding more salt and black pepper if needed. Makes about 3/4 cup Source: Unknown
