  • Orange Bread Pudding 13 slices white bread, cut into quarters 1 1/2 cups orange juice 1/4 cup (1/2 stick) butter 1 cup sugar 2 eggs 1/2 t. grated lemon rind 1/4 t. ground cinnamon Preheat oven to 325. In a large bowl, combine the bread and orange juice and beat with mixer until smooth. In a medium bowl, cream the butter and sugar until light and fluffy. Add remaining ingredients and mix well until creamy. Add to the bread mixture; mix well. Pour into a 1 1/2 quart casserole dish that has been coated with nonstick vegetable spray and bake for 1 hour, until the center is set and puffy. Serve at once. Note: This really is beast when served right from the oven. Serves 6 to 8 Source: Mr. Food
