  • Potato Casserole with Onions and Cheese 4 potatoes, about 1 pound, peeled and grated 2 onions, grated 2 eggs 1/2 cup bread crumbs Pinch of garlic powder 1 cup grated Swiss cheese Salt and pepper to taste 4 T. melted butter Combine potatoes, onions, eggs, crumbs, garlic powder, cheese and seasonings and stir until blended. Place melted butter on the bottom and sides of a 2 quart casserole. A porcelain baker is good for this. Spread potato mixture evenly into buttered casserole. Bake for about 1 hour in a 350 oven for until top is golden brown. Serves 6. Serve this dish at once. Make this dish shortly before serving. Do not freeze. Source: With Love from Darling's Kitchen
