- He played junior hockey for the Niagara Falls Flyers frm 1970 to 1972. Undrafted by any NHL team, Holt turned pro in the International League in 1972-73. The California Golden Seals signed him as a free agent in 1973, and he spent the next two seasons with the Salt Lake Golden Eagles. Holt played 48 games for the Seals in 1975-76 and two for the Cleveland Barons in 1976-77. The St. Louis Blues signed him in 1977 and Holt played 49 games for them that season. Holt played one more year for the Salt Lake Golden Eagles and then retired in 1979.

Tra i suoi gruppi menziona Venom, Motorhead, Black Sabbath, primi Iron Maiden e Judas Priest. Entrò negli Exodus nel 1981, sostituendo Tim Agnello, ed è l'unico membro del gruppo ad aver suonato in tutti i dischi pubblicati. , egli e il secondo chitarrista Rick Hunolt vennero ribattezzati gli "H-Team", nome ispirato alla popolare serie televisiva degli A-Team e chiamati così dato che il loro cognome inizia con la lettera "H". Attualmente, Hunolt ha lasciato il gruppo ed è stato sostituito da Lee Altus. Attualmente Gary è endorser ufficiale della Schecter Guitar Research; prima di tale contrattualità ha suonato un modello di chitarra "signature" (firmato) della Bernie Rico Jr., in passato ha usato Ibanez e Jackson Guitars. Nell'ottobre del 2008 Gary ha rilasciato un video didattico chiamato "A Lesson In Guitar Violence". Dal 2011 collabora con gli Slayer per sostituire Jeff Hanneman, fermo a causa di gravi problemi di salute, e vi rimane come sostituto in seguito alla morte di quest'ultimo, il 2 maggio 2013.
